Lauren Mote of Bittered Sling Extracts intensifies the usual Tom Collins with this cherry Collins, made with cherry-anise syrup, cherry bitters and ginger beer instead of simple syrup or sugar and carbonated water.
1 1/2 oz. Bombay Sapphire gin
3/4 oz. lemon juice
3/4 oz. Cherry-star anise syrup
2 dashes Bittered Sling Suius Cherry bitters
ginger beer
Build ingredients in a collins glass filled with ice.
Add gingerbeer, stir gently (swizzle) and serve with two pitted B.C. cherries on a pick.
