To help make healthy choices more accessible, brothers and entrepreneurs Aiden and Wyatt Booth brought Hopscotch, their health- and community-focused fast-casual eatery to downtown Toronto from London, Ontario, offering dishes like rice and grain bowls, salads and smoothies (in eco-friendly packaging and utensils).

Add Brown Rice to bowl
Arrange bean sprouts, cabbage, carrots, cucumber, edamame, scallions, radish and chicken over the rice.
Toss with sesame ginger dressing, then top with cilantro and nori.
Drizzle gochujang mayo on top.
