Instead of a booze forward sparking wine cocktail, how about this sparkling wine punch that's loaded with B.C. blueberries?
1 recipe blueberry syrup, see below
1 cup fresh or frozen B.C. blueberries
2 cups cranberry juice, chilled
2 cups pineapple juice, chilled
1 cup pure blueberry juice, chilled
1 cup raspberries, fresh or frozen
1 bottle sparkling wine or club soda, chilled
In a large pitcher, add the cooled syrup, remaining blueberries, cranberry juice, pineapple juice, blueberry juice and raspberries.
Serve on ice, topped up with either sparkling wine or club soda.
Blueberry syrup
1 cup fresh or frozen B.C. blueberries, divided
1/2 cup granulated sugar
2 tbsp freshly squeezed lemon juice
In a medium pot over high heat, boil 1 cup of blueberries with the sugar, lemon juice and 1 cup of water for 10 minutes.
Mash the blueberries with a potato masher and strain the juice through a fine mesh sieve, discarding the solids. Allow to cool.
