Just in time for warmer weather, Toronto's Maple Leaf Tavern is introducing a spring food menu and 13 new drinks to its signature and classic cocktail menus, plus a feature Cobbler menu. 
 
The new Cobbler program celebrates the popular 19th century cocktail, made with spirits or fortified wines such as sherry or port and garnished with fruits. This Mezcalero Cobbler is one of the five cobbler offerings, including the Sherry Cobbler, Champagne Cobbler, Sloe Jam Cobbler and Porch Cobbler. 1 oz. Aperol
1 oz. Bianco Vermouth
1/2 oz. mezcal
1 barspoon simple syrup
5 grinds cracked pepper
1 oz. grapefruit juice
1 splash sparkling wine

Shake Aperol, Bianco Vermouth, mezcal, simple syrup, cracked pepper and grapefruit juice.

Strain the mixture over 3 ice cubes and some crushed ice.

Add more cracked pepper. Add a splash of sparkling wine and cap with crushed ice

Garnish with a pinch of cracked pepper and a grapefruit slice.
