One of Winnipeg's top chefs, Adam Donnelly, opens up about travelling the world and why coming home to Manitoba was important to him
With his nationally-recognized restaurant, Segovia Tapas Bar turning nine in December, chef Adam Donnelly has been an essential piece of the Winnipeg culinary fabric. His Spanish-focused eatery, which he co-owns with Carolina Konrad, is rooted in his experiences of time spent in Spain years ago. Since opening the doors to Segovia in 2009, Donnelly has taken his understanding of Spanish cooking and applied it to regional Prairie cuisine. The result is a menu full of beautiful seasonal ingredients from Manitoba and bold flavours found by incorporating unique spice blends and techniques discovered during the chef's worldly travels before he settled back home in the Prairies.
During last year's Prairie Grid Dinner Series, Donnelly took time to reflect and explain to us how his time spent travelling helped mould him into the chef he is today, and why the Canadian Prairies will always be home.
