Vancouver's Coast Restaurant shares their recipe for lobster mac 'n' cheese

Share the comfort that mac 'n' cheese brings with the Vancouver Firefighter Charities' Snacks for Kids program. From October 19 to 26, some of Vancouver's most popular restaurants will be featuring their own versions of mac and cheese, with proceeds from the dish going to the cause. One of the restaurants is Coast, which is offering this lobster mac 'n' cheese. Want to enjoy the dish at home after your visit to the restaurant? You can recreate it with this recipe.

 

Lobster mac 'n' cheese

1 tbsp butter
2 cloves garlic, crushed
1/2 shallot, finely diced
1 cup white wine
1/4 cup sliced leeks, (sliced into half circles)
1 cup heavy cream
1 1-lb lobster, cooked, cleaned and meat roughly chopped
1/4 cup finely diced baby bell peppers
1 cup macaroni, cooked al-dente
1 cup grated Parmesan cheese
40 g mozzarella cheese
30 g gruyere or cheddar cheese
1 tsp lemon juice
salt and pepper, to taste
1 tsp finely chopped chives
bread crumbs, for garnish

In a pan over medium-high heat, melt butter and add garlic and shallot. Cook untill golden, and de-glaze with white wine.

Add leeks and reduce the white wine till there is about a quarter left (becomes thick like a sauce).

Add cream and bring to a boil.

Add in the lobster meat and peppers, reduce heat to low, simmer and reduce by half.

Add cooked pasta, Parmesan (reserving approximately 1 tablespoon for garnish), mozzarella and cheddar. Stir until cheesy and thick.

Add lemon juice and season to taste with salt and pepper.

Garnish with chives, herb bread crumbs and reserved Parmesan.
