Last month, Vancouver's cocktail queen, the Lazy Gourmet’s Shannon Boudreau competed against other caterers and bartenders at the Northern American-wide, annual Catersource Conference and Tradeshow in New Orleans. She came out on top with her custom cocktails at Swizzle! competition, this Light Through the Fog vodka cocktail being one of them.

Among top trends like colour-changing cocktails, elaborate gold garnishes, and science-focused concoctions, Boudreau expects cocktails catering, DIY drink bars and juice bars, paper prints to top cocktails, in-home bars and savoury cocktails to be hugely popular this year.

45 mL Titos Handmade Vodka
15 mL green Chartreuse
15 mL orgeat syrup
15 mL gum, syrup
10 mL Orange blossom water
15 mL fresh lemon juice
2 to 3 dashes camomile saline
1 egg white
2 to 3 dashes chocolate bitters
grated nutmeg, for garnish
24 K gold flakes, for garnish

In a martini shaker, combine vodka, Chartreuse, syrups, orange blossom water, camomile saline, and egg white. Shake vigorously for 30 seconds. Add ice, shake again.

Strain into tulip glass and garnish with bitters, shaved nutmeg and gold flakes.
