Just in time for Cinco de Mayo, Hopscotch (an environmentally conscious fast-casual restaurant based in Toronto) has a healthy rice bowl for you that is full of Mexican flavours.
Tomato salsa
4 to 5 tomatoes, diced
1/4 cup chopped cilantro
1 onion, finely chopped
Combine all ingredients in a bowl and mix well.
Lime crema
16 oz. reduced-fat sour cream
1/4 cup fresh lime juice
1/2 cup chopped cilantro
salt and pepper, to taste
Combine all ingredients together in a bowl and mix together until well incorporated.
Chipotle lime vinaigrette
1/2 cup olive oil
1/4 cup white sugar
1/4 cup lime juice
1/2 tsp ground cumin
1/2 tsp chipotle chili powder, or to taste
1/4 tsp garlic powder
Add all ingredients to a large bowl and whisk vigorously until mixture is emulisified.
Lucha Libre bowl
8 oz. cooked brown rice
4 oz. canned and drained black beans
2 oz. shredded cabbage
sliced green onions, to taste
1 sweet potato, cooked and diced
tomato salsa
2 cooked chicken breasts, diced
1 avocado, diced
chopped cilantro, to taste
tortilla chips, to garnish
chipotle lime vinaigrette
lime crema
In a serving bowl, layer rice and beans, vegetables and chicken. Distribute avocados on top and garnish with torilla chips. Drizzle with vinaigrette and lime crema.
