We may not all be lucky enough to have our own rooftop honey and garden, which is why when you're at the Fairmont Royal York in Toronto, you need to head to either the Library Bar or EPIC wine bar to try the various drinks made with its local bountry, like this cocktail, made with the new 14th In Line gin (made in collaboration with Dillon's) and the honey from its rooftop.
2 oz. 14th In Line Gin by Dillons
1/2 oz. lemon juice
1/2 oz. Royal York Pillitteri Estate ice wine
1/2 oz. honey simple syrup
2 oz. soda water
1 strip lemon peel, for garnish
Combine all ingredients in mixing glass and shake. Strain into martini glass and garnish with honey-lemon peel.
