This week, Fairmont Pacific Rim announced that it has partnered with Vancouver cultural hub Oakridge Park and urban space developer Westbank to create a unique pop-up patio experience on the iconic hotel’s outdoor plaza.
Opening for the spring and summer season on June 9, Fairmont Pacific Rim’s pop-up patio will feature an assortment of creative food truck fare from executive chef Damon Campbell, a lineup of refreshing libations, live music, and more.
“We are thrilled to welcome guests back to the front plaza for our third summer pop-up patio,” said regional vice president and Fairmont Pacific Rim general manager, Jens Moesker. “Chef Damon and the entire Fairmont team have created something special where hotel guests - and the entire Vancouver community - can come together, beat the summer heat, and enjoy some great food and drinks, all the while enjoying live music and other programming.”
Some of chef Campbell’s offerings will include dishes like the Ahi Tuna Poke Bowl with ginger rice, avocado, tomato, cucumber, radish, and crispy onion, Crispy Thai Chicken Wings with soya lime and cilantro, and the West Coast Crab and Shrimp Sandwich with preserved lemon and tarragon crème fraîche.
Fairmont Pacific Rim’s outdoor Oakridge Park-inspired space will be open Thursdays through Sundays from noon to 8 p.m. with seating available for roughly 50 guests on a first-come-first-served basis. More information about the pop-up along with associated hotel packages can be found online.
