Behind the Name: St. Catharine's Dispatch Restaurant

How this prominent Niagara restaurant got its name

The Niagara region is known best for having a plethora of amazing wineries, but it also boasts a growing population of craft breweries, distilleries and, of course, restaurants. St. Catharine's is the largest town in the area and its food scene has risen in popularity over the years. In fact, it rose to particular prominence when Dispatch opened back in early 2019.

Landing in the ninth position on Air Canada’s enRoute Canada's Best New Restaurants list in the same year, co-owners Adam Hynam-Smith and Tamara Jensen have been recognized time and time again on “no-to-low-waste" global cuisine.

“Inspired by the excitement and serendipity of our favourite travel experiences–from hailing a yellow cab in NYC to hopping in a tuk tuk to the market in Bangkok–we wanted to create a space for our guests that transported them to a place where they are up for adventure and making new memories,” says Jensen.

As much as the name is an ode to their favourite travelling experiences, Jensen goes on to say that the meaning behind Dispatch is twofold.

“[There is a] double meaning in the restaurant as our team works tirelessly to deliver highly personalized experiences that are thoughtful and effortful behind the scenes, but appear seamless and natural to our guests.”

While the restaurant remains closed for dine-in service, their retail shop is open–both online and inside the restaurant–and Dispatch To-Go is available Thursday to Sunday from 3 p.m. - 8 p.m.
