G.O.A. pop-up launches at Four Seasons Whistler today

A unique food experience in Whistler inspired by the state of Goa, India

A one-of-a-kind pop-up in Whistler by chef Sajish Kumar Das has just launched today. Taking place in an event space on-site at the Four Seasons Whistler until January 8, 2023, the chef's inspiration behind G.O.A. is his roots in the west coast region of India.

Due to a former Portuguese colony of years past, the area is known for a seafood-forward, Portuguese-Indian fusion cuisine imbedded with an array of aromatic spices and warming curries.

“The team has worked very hard in coming up with different exciting activations that turn our Resort into a true winter wonderland," said Kumar Das in today's announcement. "The newest and most exciting experience this season is the new winter pop-up restaurant, G.O.A. By using different techniques, ingredients and spices from the western coast of India and BC's freshest produce, we look forward to introducing this coast to coast culinary experience to our guests.”

Having gotten a sneak peek of this pop-up last month while visiting Whistler, I can affirm that there or plenty of wonderful flavours in the chef's elevated creations on the menu here.

Dishes like the Fried Soft Shell Crab with paratha, mint raita and coconut and Tandoori Carrot Tikka (pumpkin dal purée, microgreens, tamarind reduction) or the sablefish "Tawa Fry-style" along with mussels and clams molee (a seafood coconut curry-based dish with Portuguese and Indian origins) are just a few examples of dishes that will pique one's taste buds. Vegetarians will especially appreciate Kumar Das' King Porcini Mushrooms Korma, made with a silky-smooth cashew gravy and morel dust (pictured below).

I'm hungry just reminiscing about it.

A dinner is nothing without a drink and although the pop-up will have plenty of great wine options (by the glass or pairings) for patrons, there is also a Goan-inspired cocktail menu. The Braidwood Tavern team has helped develop beverages like The Goan Twist (rum, clarified tamarind mix, lime, chaat masala) and Mumbai Affair, made with Bombay Sapphire gin, lychee, lime, and rose water.
