After a fantastic first four months of operation inside Calgary’s iconic Fairmont Palliser hotel, Hawthorn Dining Room and Bar recently announced its first big change of 2019.
This week, Hawthorn revealed two new additions to its talented team in both the back and front of house with the introduction of new executive chef Dave Bohati and director of operations Samuel Ross.
Chef Bohati has already made a name for himself in Calgary’s culinary scene, cooking in restaurants like Market, Teatro, and Murrieta’s, and plans to continue his upward trajectory in his new position at Hawthorn.
Recently named as an ambassador for Canada Beef, chef Bohati’s skills in the kitchen combined with his love for elevating simple local ingredients appear to be a perfect fit for the Hawthorn kitchen.
"I'm excited to offer a new perspective on Hawthorn's sociables menu," explains executive chef Dave Bohati, "I can't wait to utilize some of the best local farmers and suppliers within the Calgary area to create a new fall menu that truly reflects the spirit of Calgary."
Hawthorn’s second addition, Samuel Ross, is Calgary through and through. The multitalented director of operations received both a Red Seal and a diploma in Hotel and Restaurant Management at Calgary’s SAIT, as well as a bachelor's degree in Hotel and Resort Management from the University of Calgary.
"I'm thrilled to be coming back to Calgary," shares Ross. "Working under the Fairmont Hotel and Resorts umbrella has always been a dream of mine."
