New Japanese barbecue restaurant Hello Sunshine to open in Banff this summer

Here's the scoop on Banff Hospitality Collective's newest concept

Banff Hospitality Collective recently revealed a new collaborative concept coming to town this summer from former Pigeonhole and Model Milk owner Justin Leboe and Respect the Technique’s Kaede Hirooka. Hello Sunshine will combine the nostalgic vibe of 80s ski culture with the modern and innovative cuisine the two chefs are known for.

Although both construction and the full menu are still being finalized, the hospitality group has described Hello Sunshine as a sushi and Japanese barbeque karaoke joint complete with a focal point rotisserie grill and open kitchen in a psychedelic space that promises to celebrate "all things groovy".

In an effort to provide future diners with a sneak peek of what’s to come, the restaurant-to-be is currently running a temporary takeout pop-up at 3 Bears Brewery featuring a selection of Japanese-style tapas, freshly-made nigiri and sushi rolls, creative alcoholic and non-alcoholic cocktails, and craft beer.

The Hello Sunshine pop-up is open for takeout on weekends starting at 5 p.m. Keep an eye on their Instagram feed for future updates and the official opening date.
