New Venetian-inspired wine bar to open inside Fairmont Pacific Rim

Giovane Bacaro is set to open this spring in the Fairmont Pacific Rim Hotel

This week, Vancouver-based hospitality group Kitchen Table Restaurants announced that their newest concept, Giovane Bacaro, will open up inside Fairmont Pacific Rim sometime this spring.

Inspired by the classic wine bars on the bustling backstreets of Venice, Giovane Bacaro will aim to showcase a wide array of Italian wines that place a specific focus on varietals hailing from the Veneto and Piemonte regions, along with an aperitivi program featuring a comprehensive selection of chilled Italian vermouths.

On the restaurant side of things, the Giovane culinary team–led by industry veterans chef Scott Korzack (Ask for Luigi, Autostrada Osteria, L’Abattoir), chef Colton Lehrbach (Farina a Legna, Kissa Tanto), and Eduardo Munoz (Autostrada Osteria)–will provide a casual selection of cicchetti-inspired fare with a modern twist, such as tramezzini sandwiches, pasta dishes, handmade dolci, and more. 

The Giovane Café space, which reopened back in August, will continue to offer guests its signature old-word, espresso-based menu, which includes popular beverages like mandorlata, marocchino, bicerin, and affogato.

The exact opening date of Giovane Bacaro will be revealed in the coming weeks via Instagram.
