A founding member of the Vancouver Aquarium's Ocean Wise program, Blue Water Cafe + Raw Bar will be hosting the annual Unsung Heroes Festival, with executive chef Frank Pabst featuring some lesser-known seafood gems on this year's menu.
“With every sale of an Unsung Heroes dish, Blue Water Cafe is pleased to contribute partial proceeds to benefit the aquarium's mandate for healthy oceans – for generations to come,” says the Pabst.
The 2019 Unsung Heroes Festival menu, available for the restaurant’s patrons during the month of February, aims to promote and encourage seafood sustainability featuring dishes such as carp roe bombolini, (savoury doughnuts filled with carp roe cream) and jellyfish waffle in the style of Korean pajeon waffle with green onion, peppers, kimchi, topped with jellyfish.
The menu items are paired with wine and sake carefully chosen by the restaurant’s wine director William Mulholland.
