After concluding a successful series of oyster and cocktail-focused pop-ups toward the end of summer, Vancouver’s Fanny Bay Oyster Bar and Copperpenny Distilling Co. recently announced that the duo will be teaming up for another pop-up on October 26.
The pop-up will be the first in a three-part fall series at Fanny Bay, and will feature a six-course dinner prepared by the Vancouver eatery along with six gin-based cocktail pairings from the North Shore distillery.
The seafood-centric dinner includes dishes such as kampachi sashimi with pickled daikon, cucumber, chili, cilantro, and citrus paired with a classic Kensington cocktail, gochujang grilled octopus with tomatoes and kelp powder paired with a Caesar, and cured salmon with tri-coloured beets, orange gastrique, and a negroni pairing.
