Vancouver’s Fanny Bay Oyster Bar and Copperpenny Distilling Co. recently teamed up to host the first in a four-part pop-up series featuring a selection of premium oysters and a curated pairing menu of gin-based cocktails.
Though the exact oyster varieties for the next three pop-ups have yet to be revealed by Fanny Bay, Copperpenny’s pairing menu will include Social Gin No. 5-based cocktails such as the Epernay (Champagne cordial, lemon bitters), Kensington (salted cucumber cordial, peach bitters), and Niigata (Junmai Ginjo sake, honeydew cordial, orange bitters).
Guests will also be able to order oysters and cocktails on an à-la-carte basis at each event, along with a few creative oyster shooter creations like Shooter No. 001 (a Sunseeker oyster atop Copperpenny Caesar shot) and Shooter No. 002 (a Sunseeker oyster atop Copperpenny Social Project Gin No. 005 shot) for $8 each.
The next three pop-ups take place at the Copperpenny's North Vancouver distillery on July 10, August 14, and September 11. Reservations can be made via email.
