Toronto chef Adrian Forte shares his thoughts on racism in the hospitality industry

After a week away from the More Than Maple Syrup podcast, Emma Waverman returns to the booth to chat with co-host Phil Wilson about the current state of the Canadian hospitality industry, the ever-elusive solution to takeout French fries, and the conclusion of Top Chef Canada season 8. 

Once the duo run through their assessments of the final episodes and of the season as a whole, they’re joined by Toronto chef and season 8 competitor, Adrian Forte. Chef Forte offers a behind-the-scenes look into his experience throughout the competition, from the subtle strategies he employed to which of his dishes he thought was best. 

From there, chef Forte shares his perspective on racism and the difficulties of being a chef of colour, the history and importance of Afro-Caribbean cuisine, and creating a more inclusive industry for future generations.
