This week, Vancouver’s Odd Society Spirits unveiled a new limited-edition release of its Wallflower Gin and Commodore Single Malt Whisky that will be available to purchase in the days leading up to Valentine’s Day.
The two spirits were each aged in separate port barrels for 14 months to draw out the sweetness of port from the oak staves. The port-barrel-aged Wallflower Gin combines the light floral, bright, and zesty notes of the signature gin with notes of juicy stone fruit, blackberry jam, and toasted oak, resulting in a soothing and refined finish.
The Commodore Single Malt Whisky—which is already double-distilled and aged for over three years in ex-Bourbon barrel— is finished in freshly-emptied port barrels, which provides the whisky with a rich colour and texture with flavours of stewed plum, black pepper, and a sophisticated touch of leather.
Odd Society’s limited-edition port-barrel-aged spirits are sold in 375mL bottles and will become available for purchase at the distillery and private liquor stores across B.C. on February 10. Online orders for Canada-wide shipping will open up on February 13.
