Chefs Billy Nguyen and Emily Butcher announce fall dinner series in Winnipeg

After a successful two-night pop-up in Winnipeg back in the spring, Top Chef Canada Season 9 runner-up Billy Nguyen is heading out west to once again collaborate with fellow alumnus Emily Butcher. Happening from October 6-8 at Butcher's popular restaurant Nola, Billy at Nola will open for reservations online Thursday morning at 9 a.m. (CDT).

Nguyen explains that since the last pop-up had an extensive waiting list of Winnipegers who didn't manage to snag seats, this time around they are doing their best to make sure as many folks can enjoy the collaborative menu offerings as possible by expanding to three nights of service. Table reservations can be made for two to four guests to a maximum of two and a half hour seatings and will be limited to one table per name. The menu will be presented in à-la-carte style with a tasting menu option for folks wanting to opt for the full-fledged dining experience. Butcher and Nguyen will work with popular local wine and spirits purveyor Ellement Wine + Spirits to offer a unique drink menu, in addition to a "brand new cocktail list" by barkeep Dylan Arthur.

Nola is located at 101-300 Tache Ave and is open Tuesdays to Fridays for lunch and dinner and Saturdays for dinner. Reservations for Billy at Nola (Oct. 6-8) can be made online as of Thursday, Sept. 22 beginning at 9 a.m. CDT.

Billy Nguyen heads to Ottawa

Later in October, Nguyen will also be popping up in Ottawa. The one-night event will take place on October 26 and will see the chef collaborating with chef Dominique Dufour (Gray Jay owner, Top Chef Canada Season 8) and Brendan Cullen (Riveria) on a 10-course tasting menu.
