Here are the 30 best new restaurants in Canada for 2023

From a cool contemporary Peruvian spot in Vancouver and a French-Asian fusion wine bar in Calgary all the way over to a full-female owned-and-operated concept in downtown Halifax, 30 restaurants from coast to coast are celebrating their nominations for Air Canada enRoute's Canada's Best New Restaurants 2023.

The list includes restaurants from 15 cities from across Canada, but it does feel, somewhat refreshingly, Western Canadian-leaning. Celebrated Mexican chef Elia Herrera opening her restaurant Milpa in Calgary, chef Adam Donnelly returns to the Winnipeg restaurant scene with Petit Socco, and the jawdroppingly gorgeous Wild Blue in Whistler, there's plenty of good reasons for said western weight.

Canada’s Best New Restaurants is the only cross-country restaurant ranking to use a single, anonymous reviewer who sets out to visit the year’s best new restaurants. Based on the recommendations of a coast-to-coast panel of food experts including people like food writers Carmen Cheng, Dan Clapson and Mijune Pak, Air Canada sends one undercover writer on a month-long culinary marathon to try the 30 nominated restaurants to decide the official Top 10.

The official Top 10 announcement will take place in Toronto on Nov. 1, 2023.
