Norca, in the new Le Germain Hotel Ottawa, opens its doors to offer distinctly Canadian cuisine.

NORCA, Ottawa’s new restaurant in the Le Germain Hotel Ottawa, takes guests on an adventure through a lively, evolving and gourmet menu that is truly Canadian.

Modern, sleek and inspired by Canada’s natural landscape, Norca showcases natural elements with an industrial twist, like wood throughout the space and polished stone. "Norca" stands for NORthern cuisine, CAnadian ingredients. All ingredients are homegrown on Canadian soil, so the menu changes daily depending on the season.

Executive chef Dominique Dufour uses Canadian ingredients such as wild mushrooms, humpback shrimp, smoked sunchokes and a variety of proteins and seafood. The menu is inspired by our Canadian landscape, from coast to coast, and includes dishes like smoked Ivory Chinook salmon with herbed yogurt, seaweed crumble and fingerling potatoes; mulard duck with caramelized squash, forest gremolata, foie gras sour cream and duck consomme, as well as house-made charcuterie.

Those who love classic cocktails can enjoy drinks made with local spirits at the bar or in the lounge area. In celebration of the opening, Le Germain Hotel Ottawa and the Quebec brand Romeo's are introducing a limited-edition bottle of gin created exclusively for the hotel. The bottle itself is depicted with art inspired by Ottawa. The new signature cocktail, Juliet with Romeo's, combines gin, vodka, Lillet, lavender bitters, dill, and cucumber to illustrate the unlikely but perfect combination of these ingredients.
