Whistler’s Wild Blue Restaurant reveals details of its bar program

The highly anticipated eatery reveals what to expect from its wine and cocktail programs

Few restaurants in recent memory have stirred up more buzz and anticipation than Whistler’s soon-to-be-opened Wild Blue Restaurant and Bar, and this week, the restaurant revealed what to expect from its wine and cocktail programs. 

Wild Blue wine director Chris Edens has put together an expansive and versatile wine program featuring a wine list that Wild Blue says will allow guests to browse over 350 selections, including some from producers yielding less than a barrel for an entire vintage, some with an extraordinary vintage, and some holding special provenance. Wild Blue also expects to offer wine seminars and future accredited wine education to its employees, as well as winemaker dinners, seminars, and collaborations down the road. 

The cocktail program was designed by bar manager Zack Lavoie to pair the seasonal approach of chef Derek Bendig’s food menu, while also being capable of standing on its own. Wild Blue says guests can look forward to a well-rounded menu that appeals to both classic and contemporary cocktail enthusiasts with ingredients from Japan, the French and Italian Riviera, and the Pacific Northwest.
