A new wine bar concept from award-winning Burdock and Co owner and chef Andrea Carlson opened in Vancouver this week, offering guests a vibrant menu of naturalist wines and bespoke cocktails along with chef Carlson’s signature farm-to-table fare.
Originally conceived as a recurring pop-up series, Bar Gobo has found a permanent home on the edge of Vancouver’s historic Chinatown in the small-scale space formerly occupied by The Parker. Chef Carlson’s menu is packed with a selection of comforting share plates, from oysters with tarragon mignonette to pork ribs with tahini yogurt, to lamb neck with focaccia, green olive, yogurt, and lacto-fermented tomato.
Bar Gobo’s beverage program is headed by 2020 BC Sommelier of the Year, Peter Van de Reep, who has assembled a 12-bottle wine list along with a range of simple, but sophisticated cocktail offerings.
Bar Gobo is open Wednesday to Saturday from 3:30 to 10 p.m.
